Vine variety: Predominantly Chardonnay with native white grape varieties.

Area: San Marzano, Salento, Puglia. At about 100 meters above sea level.

Soil: Shallow, with medium-fine texture.

Farming type: Guyot (4,500 vines per hectare).

Grape harvest: Middle ten days of August.

Vinification: The grapes are destemmed and left in cryomaceration for a few hours. The next phase is the gentle pressing of the marc followed by static cold decanting so that it happens naturally. The alcoholic fermentation takes place in French oak barriques.

Ageing: On yeasts in French oak barriques for 4 months, with weekly bâtonnage.

Tasting notes: Straw yellow colour with golden reflections; mellow citrus fruits and delicate vanilla floral notes fill the nose; to the taste it is generous in its elegance, fresh, delicate and mineral.

Awards: LM 99points

'Wines like this seemed like mirages up to ten years ago. Simple, marvellous fruit: now Mediterranean, now tropical, now temperate, now rich in essences, while the same grapes seem especially sappy and fully ripe. No defects or oxidised hints that alter its limpidity and expressive integrity. With the sweetness of the fruit that releases oak's mint, with the candour of icing and jasmine. With a touch of pulpy viscous density, a palatial balance of absolute roundness and yet of an innervating gustatory acidity. A wine of maximum analytical and sensorial value that, like the rainbow, in a crystalline way, spreads its wonderful wheel of aromas." - 99 POINTS, LUCA MARONI
