Vine variety: 100% Chardonnay.
Area: San Marzano, Salento, Puglia. At about 100 meters above sea level.
Soil: Shallow soils with medium-fine texture.
Farming type: Guyot (4,500 vines per hectare).
Grape harvest: First twenty days of August.
Vinification: The grapes are destemmed, and left in maceration for a few hours. The next phase is the gentle pressing of the marc, resulting in a static cold decanting so that it happens naturally. Alcoholic fermentation takes place in stainless steel tanks at 12 °C.
Ageing: In stainless steel tanks.
Tasting notes: Straw yellow colour; at first floral and enveloping bouquet with hints of jasmine and wild rose, followed by notes of pineapple and banana; on the palate it is elegant, fresh, delicate and mineral.
