Founded in 1995 by Burgundian oenologists Catherine and Laurent Delaunay, Badet Clément applies precise, cool-climate winemaking discipline to the sunnier terroirs of the Languedoc. La Cour des Dames Sauvignon Blanc draws on plots near the Étang de Thau for salinity and citrus, and the Orb Valley's clay-limestone soils for riper, tropical notes.
Pale yellow with green reflections, it's an explosively aromatic Sauvignon Blanc — exotic fruit and citrus over classic boxwood and blackcurrant bud. The palate is lively and clean, with a rounder mid-palate than you'd expect and a long, saline finish.
Tasting notes: Sauvignon Blanc, 100%. Pale yellow-green; exotic fruit and citrus; crisp, saline finish.
Food pairing: Goat's cheese, ceviche, or a light Thai-style salad.
