About 5% of the Cabernet Sauvignon grapes are vinified as whole clusters through carbonic maceration, lifting the aromatics and adding a supple texture. The remaining fruit is de-stemmed and fermented cool in stainless steel to preserve freshness and varietal character, with no sulfur added at any stage.
