Ripe blackberry, lavender and violet aromas combine with subtle hints of mocha cloves, smoky oak and an underlying savoury pancetta edge. A palate of rich berry fruits, layered spice and supple tannins blend with the warm French oak and an elegant acidity to create a juicy, well structured finish.
VINEYARD & WINE MAKING
Harvested and destemmed during the cool of the early morning. The parcels of fruit were cold soaked for 7 days then inoculated with a selected Burgundian yeast strain. Daily plunging followed by an extended maceration to gently manage the wines tannin profile, concentration and balance. 12 months aging in 20% new French oak Puncheons with a full malolactic fermentation.
