White peach, elderflower, nectarine and lavender flower aromas. A soft entry before revealing a rich mid palate of succulent passionfruit and quince flavours with a silky texture and slight waxiness note to finish minerality balance with a crisp, elegant long finish.
VINEYARD & WINE MAKING
Grapes were gently pressed to retain only freerun and light pressings juice fractions. Two ferments from the same single vineyard site were fermented cool with selected aromatic yeast strains to retain varietal intensity and character. Matured on light lees for a further 3 months and then racked prior to blending.
